Kale Guacamole
Kale Guacamole (vegan, gluten-free)
Ingredients
- 2 ripe medium avocados
- 1 cup red grapefruit, chopped
- 1/4 cup red onion, chopped
- 1/3 cup cilantro, chopped
- 1/2 cup kale, chopped
- 1 lime, juiced
- 1 tbsp raw sunflower seeds
- 1/4 tsp pink salt
- 1/4 tsp ground pepper
Instructions
- Mash 2 ripe avocados with a fork until smooth, and then add in grapefruit, red onion, cilantro, kale, lime juice, sunflower seeds, salt and pepper.
- Mix all ingredients well, and serve with your favorite chips, sliced vegetables, or even on toast.
